Cashew Pie
1 pie crust(unbaked)I make my own
Filling:
3/4 cup firmly packed brown sugar
3 tablespoons butter, softened
3/4 cup light corn syrup
1 tsp vanilla(I use real vanilla)
3 eggs
1 cup chopped cashews
Heat oven to 350. In large bowl,beat brown sugar and butter at high speed until light and fluffy. Add corn syrup and vanilla, beat at medium speed until smooth. Beat in eggs one at a time, blending well after each addition. Stir in cashews. Pour into pie crust. Bake at 350 for 45 to 50 minutes or until top of pie is deep golden brown. Cover edge of crust with strips of foil after 15 to 20 minutes of baking to prevent excessive browning.
Broccoli and Rice
1(16 ounce package or 2 -10 pkg of broccoli)you can use regular or chopped
1 can of cream of mushroom soup(I make my own. I got the recipe off of allrecipes.com)
8 ounces of velveeta
1 1/2 to cups cooked minute rice
I melt the cheese and add the soup to make a sauce and pour over the broccoli and rice.
