Now that the weather is getting cooler here's a good creamy soup recipe..

Baked Potatoe Soup

Ingredients
4 baking potatoes (about 2 1/2 pounds)
2/3 cup all-purpose flour
6 cups milk
1 cup (4 ounces) cheddar cheese, divided
1 teaspoon salt
1/2 teaspoon black pepper (I leave this out)
1 cup sour cream (Only if you are not diet sensative) you can sub this with a cream cheese instead.
3/4 cup chopped green onions, divided
6 bacon slices, cooked and crumbled


Preparation
Preheat oven to 400°.
Pierce potatoes with a fork; bake at 400° for 1 hour or until tender. Cool. Peel potatoes; coarsely mash. Discard skins.

Lightly spoon flour into a dry measuring cup; level with a knife. Place flour in a large Dutch oven; gradually add milk, stirring with a whisk until blended. Cook over medium heat until thick and bubbly (about 8 minutes). Add mashed potatoes, 3/4 cup cheese, salt, and pepper, stirring until cheese melts. Remove from heat.

Stir in sour cream and 1/2 cup onions. Cook over low heat 10 minutes or until thoroughly heated (do not boil). Sprinkle each serving with cheese, onions, and bacon.

I printed it off. Hubby may get some home cooked food in the next few days. It sounds really good. You don't happen to have O'Charley's recipe for their rolls to go with it do you!

That sounds so good, but I am still staying away from dairy. I love potato soup. I have noticed that I tend to handel food cravings well if it is something I see all the time. First, I craved pizza so bad now I am ok with it. Now I want potato soup and chili! I just remind my self the pain is not worth it. Does any one have any good recipies with out dairy?

Curl ~ I know what you mean about pizza. My husband is working late and the pizza just came for the kids. In the old days I would yearn for it and maybe even sneak a bite. Now it is like, "Hey the pizzas here. Come eat". And I went back to warming up my soup.

The Potatoe soup sounds sooo good. I don't do cheese well or dairy for that matter. I make a lot of soups, starting with a home made chicken or veggie broth/stock. It is a little bland, however my bladder likes bland! I make a big pot of stock on a Sunday and it makes the house smell so good.

The broths are so easy. For chicken I just take a whole chicken, add a little sea salt and simmer it until tender. I then pick off the meat I will use (breast and thigh) and replace the chicken in the pot and cook for 4 more hours. I pour it through a strainer into jars. For veggie stock, I take any veggie my bladder can handle, wash it, cut it in half with the peel, leaves, etc. still on and put them in a big pot of water with sea salt. I cook it all day and again, pour it through a strainer into jars.

I then simply take some out of the fridge and add whatever I have in the kitchen that is IC safe for me, ie. chicken, pasta, rice, potatoes, beans or veggies and cook until tender. It is really good!
