:::I HAVEN'T TRIED THESE YET...a friend gave me the recipe as it is IC friendly. I want to try them this w/e. If you try them before, let me know how they are!:::

Oatmeal Muffins

1 cup flour
1 cup milk
2 tsp baking powder
1 egg, beaten
1/2 cup brown sugar
1 cup uncooked oatmeal
1/2 tsp baking soda
1/4 cup melted butter
1/2 tsp cinnamon
1 cup shredded carrot
pinch of salt


Preheat oven to 375 degrees. Add flour, baking powder, baking soda, cinnamon and salt in a large bowl. Mix well. Then add sugar, egg, milk and butter. Mix well. Add Oats and carrots, stir again. Grease the bottom of the muffin trays and bake for 25 minutes. Yields a dozen muffins.

1 cup old fashioned oatmeal
1 stick of oleo/butter
1 1/4 cup boiling water
Mix and let stand for 20 minutes

Add
1 cup sugar
1 cup brown sugar
And cream together

Add 2 eggs
1 teaspoon vanilla

Mix together and then add to above:
1 1/3 cup flour
1 teaspoon soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg (if you can have it)
1 teaspoon baking powder
1/2 teaspoon salt

Pour into 9x13 pan and bake at 350 for 25-30 min

Topping
6 Tablespoons butter/oleo
1/2 cup sugar
1/4 cup hot milk
1/2 teaspoon vanilla
1/2 cup coconut (with no preservatives)

Pour topping over baked cake, (when you take it out of the oven and it is still hot) and broil for a few minutes until brown. (Be sure and watch this b/c it will burn real easily.)

This is a really old recipe from my mom and I just realized this is one recipe that I can adapt to be IC friendly. It is really good and moist.

Robin, I have your recipe --- it was given to me by a friend many years ago. I haven't made it for a while; I'll have to do that.

I will look back and find it. That is what i am taking to the tailgating get together in Starkville, MS. I think I am going to try the Oatmeal cake as well! That way I know I will have some desserts I can eat!

Anyone else on here Mississippi State Fans? I am so excited that I finally get to go the the "Egg Bowl" (Mississippi States plays Ole Miss"! While my son was in college, I never had the chance like he did since I was obligated to spend Thanksgiving with my hubby's family or my mom's side. This year, since this is the first year of my son and DIL's marriage, we decided whoever wants to go can go, and that we are having Thanksgiving with my DIL's family and their friends and then tailgating for the football game on Friday after Thanksgiving!

I haven't been able to go tailgating at all this year. I normally go before it gets the chance to get cold because my bladder doesn't enjoy the cold temps, but I am taking plenty of quilts! The thermal pads don't seem to help me, so I am hoping for the best! I have my heating pad ready in case of emergency!
