I really want to make a corn casserole... I don't mind if it is sweet or not... Here is one recipe, but I don't know if I can handle sour cream or not (afraid to try it). What can I do to modify it?

Full Fat Version:
1 box Jiffy corn muffin mix
1 egg
1 can creamed corn
1 cup frozen corn
1 stick of butter melted
1 8 oz. container of sour cream

Mix ingredients, pour into a greased cake pan and bake at 350 degrees until it is golden brown on top. Add shredded cheddar cheese to the top for extra flavor in the last 10 minutes of cooking!


Lower-fat Version:
1 box Jiffy corn muffin mix
1 egg
1 can creamed corn
1 cup frozen corn
1 8 oz container of fat free sour cream
1/4 cup olive oil

Mix ingredients, pour into a Pam sprayed cake pan and bake at 350 degrees until it is golden brown on top. You could add low fat or fat free cheddar cheese to the top instead of the full fat cheese.

I did find a recipe that uses american cheese and no sour cream... so maybe I will try that one in the mean time... but any advice in changing this recipe would be appreciated!!!

I would try putting creamy cottage cheese in a blender until smooth then using it to replace the sour cream. I use this as a base for dips and add a little milk to it make dressings.

Be sure to check what is in the Corn Mix you are using to make sure everything is IC friendly.

I use just cream corn and butter and ritz crackers...

You just put butter and cream corn in baking pan. Then put crackers in a zip lock back and cush them and mix some with the corn and butter and sprinkle some on top..:smile tee

There's an artificial sour cream available. The real stuff isn't a problem for my bladder. If you're sensitive to milk products, you won't want to use it.

You know, maybe I should just try sour cream...

I don't seem to be sensitive to a lot of things. Dairy is a staple in my diet (milk, cottage cheese, some cheeses... still afraid to try sharp cheddar).
