Last week I decided to get really serious about the IC diet, rather than just eliminating a few foods. (My uro isn't sure if I have IC or nerve damage, but I want to see if the diet will help). Anyway, I finally found some preservative free bread and thought I was doing a good job staying on the diet. Then I got to really reading the label and found that it contained soy lethicin. I found several other organic breads containing it also, but finally found one without either preservatives or soy lethicin (doesn't taste as good). I went on this week using Smart Balance Light for a buttery topping and then really got to looking at the ingredients on it, and found that there's soy lethicin in it! How frustrating! Has anyone else found that soy products bother them that much? Is soy lethicin as bad as other soy products such as tofu, soy milk etc. This just seems to be such a pain, especially when it's in foods that are considered healthy.

Thanks for the responses. The two perspectives on this substance are certainly interesting. There is so much information out there and so much of it is conflicting! I suppose all of this is trial and error with each of us as to what we can eat and what we can't eat. So far, I've been avoiding coffee, chocolate, tomatoes, and a bunch of other things, including all fruit except pears and blueberries. I've done this for close to 3 weeks and can't tell any difference in my symptoms. Does anyone know how much time it may take to see a difference?
