Does anyone have a meatloaf recipe that won't kill a person who eat it? :help: I have tried every recipe I can find and it's always :pray: that you survive the meal. :bonk:

Hi Waterflow -- my husband made it last night, and we take turns making it on occasion -- I don't add a whole lot to it because I don't know how to cook very well, but it is always edible and at least for me, not giving me any problems.

Add some breadcrumbs, an egg or two depending on if you are doing a one or two pound meatloaf. Add a little catsup if you can use catsup -- skip it otherwise! You can add salt and pepper, and use whatever your favorite spices are -- we like the lawry's seasoning salt and it doesn't seem to flare me -- however, when in a flare we are all different -- use what works for you.

We would add onions or onion powder, peppers cut up (bell peppers) and some worchesthershire sauce again if you can take it...

Meatloaf is leftovers --- whatever you still have left over, throw it in!!! Cook it with a few potatoes or carrots in the crockpot, or even in the oven if you have a little extra room in the pan! One dish meals -- my specialty!

I use only crumbled saltine crackers, eggs, a bit of sage, and chopped onion or leeks. I don't use any tomato or tomato product in meatloaf. If anyone wants to add it at the table they can.

Individual meatloaf patties

My dad took this from an old German/Austrian recipe...

1/2 pound lean ground beef
1 slice of bread, dipped in water & wrung "dry"
1 egg
1/2 tsp sage
salt & garlic to taste

Put all this in a bowl & mix together. You can food process it, but I just squish it together with my hands. Form into 2-3 patties.

Put 1-2 T canola oil into a pan & cook the patties on medium heat until cooked through. Turn only 1-2 times, pressing lightly with the spatula.

These freeze well(after you cook & cool them) or make good "meatloaf" sandwiches. Serve with whatever you like with meatloaf: mashed potatoes, steamed vegetables. I like buttered pasta on the side.

For a different taste, you can also modify this recipe & substitute dried basil & oregano for the sage. I added a tiny bit of mozzarella cheese & small bits of diced red bell pepper also. Served this over pasta.
