I need ideas on sandwiches. I used to eat sandiches all the time, tuna salad, chicken salad, tomatoes and cheese (how I miss them)!
can I please get ideas on sandwiches? I live alone and can't be cooking a whole meal, like chicken with veggies and rice all the time. I don't have the time and don't have a cook, besides I need variation. I know I can freeze some food ahead of time but still I wonder what kind of sandwiches are ok for IC. I don't have a very good imagination when it come to fixing IC friendly food.

I make tuna salad by smooshing canned tuna with some cream cheese so it hangs together. I usually add a little bit of mayonnaise, but if you're extremely diet sensitive, it's still good without the mayo. I do like to butter the bread and add shredded lettuce.
American cheese should be okay and makes very good grilled cheese sandwiches.

I take leftover steak(sliced very thin) or chicken & make a sandwich with that. I use cream cheese with a tiny bit of Marie's Lite Creamy ranch on the bread. (That salad dressing is ok for me in small amounts) I also put romaine lettuce & thin sliced red bell pepper on it for crunch.
I had a leftover pork chop last week & that made a good sandwich too.
Grilled mozzarella cheese sandwiches are tasty. (And fast on the George Foreman grill!)
If you make a sandwich & the bread is too hard due to our limited # of condiments, you can put a slice of mozzarella cheese in it & pop it in the microwave for 30 seconds or so. That softens the bread & slightly melts the cheese.

I just had a turkey and cheese. I buy Natural Choice Hormel turkey & ham. It has no preservatives, you find it prepackaged in the Deli coolers. One good thing is it can be frozen too.

AH! I SOO miss tomatoes and cheese! But American cheese and I think lighter cheeses are ok.) I', completely lost on diet b/c I'm in a flare and everything hurts! I think I have been in pain for so long that I've developed a tolerance to it, it seems like most people on ICN are in this debilitating pain and my IC looks pretty ugly on screen, but I can still function. That makes it really hard to stick to the diet. It's like, well, I already hurt, how much worse can it get? My doc just said to keep doing what I'm doing and pay more attention to what I eat and when I hurt in relation to that. It's much easier to do that than an entire elimination diet. So far I've eliminated tomatoes, beer, tea, sodas, most fruit juices and really spicy food (I'm from south louisiana, so that's REALLY hard) Now that I'm done rambling, let's stay in touch, I'm single too and it would be really cool to share food ideas with another bachelorette!
Oh, you know, if you have a Subway near you, their roast beef or turkey on wheat, with just lettuce, bell pepper, shredded carrots, those are fine for me.
At Safeway I get the "dinner roast" turkey or the PrimoTaglio roast beef at the counter & those meats work out fine too.

also mix 1/3 cup cottage cheese, 1 boiled egg and little onion in you can tolerate that and it tastes like egg salad. Makes a good sandwich.

I may be strange, but I like hummus sandwiches. I make my own hummus (so no lemon juice- I only use the zest). I can tolerate cucumbers, spinach, red peppers, carrots and IC-friendly cheese, so these are my staples. I'm not a vegetarian, but with the hummus it is a pretty satisfying sandwich. If I have a cooked chicken breast on hand I will add it too. IC has really made me a more creative cook!

My aboslute favorite sandwich is a little unusual! I LOVE grilled cheese sandwiches, but cannot tolerate any cheeses except mozzarella, feta and muenster. So I was stumped for grilled cheese ideas- until I remembered a tip from a series I read- the Hannah Swensen mysteries by Joanne Fluke, has anyone else read them? It's a series about a woman who owns a bakery, and after almost every chapter, a recipe is included which was mentioned in the story. (GREAT series if you like mysteries.) But anyway, there was a "recipe" for grilled cream cheese sandwiches, which are absolutely wonderful! I love them so much that I crave them way more than I ever wanted reg. grilled cheese. They're a must-try; you'll be hooked!
I use whatever bread I have on hand (wheat is very good, as is regular white), butter the outsides, and cut pats of cream cheese (from brick cream cheese) in about centimeter-thick slabs. Very, very, very good. :)
You know, I haven't looked at those books since I was diagnosed- maybe there are some good dessert ideas in there! I'll have to go look. :)
