How long does it take to have a flare up after eating ir drinking something you shouldn't. What can I do to prevent a flare up.

Some can come on within minutes and some for several days after eating/drinking what you should not have.
It is hard preventing flares. One thing you can be doing is the IC diet, once you figure out what food/drinks that bother you then you can avoid them. Also stess for me plays a huge part in flaring up my IC. Maybe for that you can try yoga or relaxation methods. Also for the food portion you can purchase Prelief over the counter that can help with the foods you should not have eaten

For everyone, the time is a little different. For me it depends on the offending food and how much I consumed. From a few minutes to a few hours.
Check out the patient handbook at the top of the page. It will take you to another section where you can locate the "IC Diet". Print out a list of these foods and try eliminating some of the offenders from your diet.
For me, I don't have to eliminate everything, if I know that I am going to eat something that might be a potential problem, I take an over the counter supplement I buy at Walgreens called Prelief before eating. Usually I do ok, but not always.

I 2nd the stress comment.
And lets not forget about hormonal changes. I am currently in a terrible flare thanks ot good ol' mother nature.
