Does anyone have suggestions for some "safety" snacks? I have been eating mozerrella string cheese, handful of almonds, or crackers with cream cheese but I am getting bored fast? Anyone have good snack suggestions? Are pretzels or popcorn alright?

Do you have the Aldi grocery store near you? If so, they have these bite size caramel flavored rice cakes made by a company called Fit and Active. They are yummy! Also, IC friendly granola bars or just plain granola...Aldi's carries good granola bars, oat and honey flavored. If you have any IC friendly cereals, they can be eaten out of the box, skip the milk.

Try Orville Redenbacher's Caramel or Peanut Caramel corn cakes. They're delicious. A sweet treat with not too many calories. How about Corn Nuts? Sometimes I eat dry cereal for a snack. I can eat Kraft caramels too. Hope these help. Praying that you find lots of safe goodies to eat. Blessings of grace and peace to you and yours.

Do you have a Trader Joe's near you? If so, their Fat Free Caramel Popcorn is yummy. I also like their plain pita chips (you can make a dip by blending cottage cheese or cream cheese thinned with a little milk and seasoned with garlic or herbs you can tolerate). The original flavor Fritos have no preservatives or additives. Many do ok with the original Triscuits (melt a little mozarella cheese on them and add sliced black olives for a filling snack). Carob malt balls are a tasty sweet treat. Homemade white chocolate chip cookies are good, too.

1. Wheat thins
2. Nilla wafers too.
3. Cream cheese on celery or on plain rice cakes .
4. Homemade muffins (make on weekend & freeze).
5. Steamed milk with a dash of vanilla & cinnamon.
6. Cottage cheese mixed with a few raisins & cinnamon.
7. Animal crackers (check for problem ingredients)
8. Classic Lay's potato chips (yellow bag)
9. hard boiled egg with a little salt
10.Fruit bars for sale in the ICN store (Pear Pear & Pear Blueberry)

Thanks everyone. I already hit trader joes today and picked up some yummy snacks. I love caramel so that was a big help and Im glad to know that chips and pretzels are still okay. Homemade white chocolate cookies (yum). I would have never thought of that. I might be doing some baking over the weekend :)

Oh yeah, those are lots of my faves too! (and tigger_gal, I have been hung up on peanut M&M's now for a month or so ... me too in moderation, I just buy the small individual sized bags, big ones could be danerous!! LOL)

I like to make my own pita chips too, cut in triangles, brush with olive oil, kosher salt and herb of choice - usually Italian seasoning. I also make a white bean dip to eat them with, just canned great northerns or canelinni (sp??) beans, olive oil, garlic salt and herbs pureed in the blender...yummy and lots of protien too!

I have a fantastic recipe for caramel candy bars (a gooey cookie bar, yum!). I modify lots of my recipes and got to www.Allrecipes.com a lot!! Helps give me ideas! So check through yours to see what you can find! The caramel candy bars originally called for chocolate chips in them as well, I obviously just omitted them, and honestly, don't think I'd like it with them!!! And family doesn't know the difference!! LOL :)

Bagels and brick cream cheese also another staple, to mix it up sometimes I sprinkle dill and garlic powder (I use Trader Joe's it's all natural, no preservatives in it and whatnot), that's been a snack and a lunch with some canned pears on the side lots of times!! ;)

And I can't forget Lay's plain potato chips with the cottage cheese dip Annie recommended!!

I also make oven fries from scratch seasoned up and sometimes dip in a tiny bit of Ranch dressing or I combine some honey with a teeny dab of Dijon mustard (a little goes a looooong way for big taste) and if I am dipping -- I don't forget my Prelief!! ;)

I love the Quaker Carmel Rice cakes and the caramel Quaker Quakes. Very yummy and an easy snack.

Hmmm, brain running empty here, lol. Apparently only so much can be in there at one time, so as I think of more I'll add them!!

Hey, Tracey, what kinds of spices do you add to the white bean dip? Besides the garlic... Please post your gooey caramel candy bars recipe for us or pm it to me. I LOVE caramel. I too use www.allrecipes.com. They have some great recipes that can be modified to fit our needs. Thanks for all of the suggestions. Praying that you eat lots of good stuff. I like vanilla wafers, cheerios, cinnamon toast, bananas, cottage cheese, yogurt, blueberries, raspberries (both frozen), sometimes crackers and peanut butter.......

In my bean dip, I use pretty much whatever I am in the mood for, lol. ;) The white beans make a great back drop for anything really. I usually always use the garlic, lol, and will add either or all (LOL): basil, thyme, oregano and dill. I just add to my taste, it's fun really. Like I said, the beans are so versatile, it's only limited to what you can dream up, erm, or what your tastes are like, hee hee!! :)

Here's the cookiebar recipe... if anyone is sensitive to the walnuts, either omit (as I did at first) or use almonds instead... There are also oats in this, I am not sensitive to them either... I think at one time I ate half of them in one day.... :bonk:

Caramel Candy Bars

Preheat oven to 350 degrees
Grease 9x13” baking pan

1 14 oz. bag of caramels, about 50 pieces (I use a bag and a half most times)
1/3 c milk
2 c flour
2 c quick-cooking or old-fashioned oats
1 ½ c packed brown sugar
1 tsp baking soda
½ tsp salt
1 egg
1 c margarine or butter, softened
1 c chopped walnuts

1) Heat caramels and milk in a 2qt saucepan over low heat, stirring frequently, until smooth.
2) Stir together the flour, oats, brown sugar, baking soda, salt and egg in a large bowl. Stir in butter with fork until mixture is crumbly. Press half of the crumbly mixture in greased pan.
3) Bake 10 minutes. Sprinkle nuts over baked layer. Drizzle with caramel mixture. Sprinkle with remaining crumbly mixture. Bake 20-25 minutes or until golden brown. Cool thirty minutes, loosen edges from sides of pan; cool completely. For 54 bars cut in 9 rows by 6 rows.

you know we should all send in IC friendly recipies and make a little recipie book like they do in elementary school :)

i really love the quaker oatmeal squares in cinnamon.. they're so delicious! they have them in maple sugar too..

I love anything sweet.... the other day I had a piece of pumpkin pie with whipped cream, and did surprisingly well with it...

I love and do well with vanilla wafers too.. and you can add some peanut butter to them also.

Here you go, Cindy...(passing the caramel popcorn)... ;) ..mmm... good stuff!

Since we're on a roll with the sweets, I'll add a few more I enjoy. Trader Joe's Petite Palmiers puffed pastry cookies are good and so are their Butter Waffle Cookies. TJ's also has a blueberry ice cream that is yummy and frozen Belgian Cream Puffs (come with a chocolate sauce packet that I give to hubby). TJ's lightly salted Kettle Chips are pretty good, too. They are hard to find, but Nestle's does make a White Chocolate Nestle Crunch Candy Bar. Whenever I find them, I buy a bunch and have a stash put away for "emergency use".

If you are ok with graham crackers (I do fine with Keebler's Honey Grahams), you can spread a little Haagen Dazs vanilla ice cream between two graham crackers and have an ice cream sandwich. There's another really BAD thing I found out last winter I could tolerate. I wouldn't recommend a newbie try it if you are just starting the diet, but later on when you are feeling better you might try Krispy Kreme glazed donuts. I know, terrible for you...but since I discovered my bladder is fine with them, my hubby brings home a few for a special treat for me when I am feeling a bit down. Works every time to sweeten my disposition!

Homemade pumpkin pie is wonderful, especially this time of year. I, too, love the Allrecipes site. I've found many good recipes there that are easily adapted to make them IC friendly. I found a blueberry muffin recipe there that is the best muffin recipe I've ever tried. I also found an absolutely wonderful carrot cake recipe there.

It takes awhile to learn all the ins and outs of the IC diet and discover your own personal tolerances and sensitivities. Once you get through that part, you quickly learn to adapt recipes to make them compatible with the diet and then you can get quite creative and your menu options really expand. Oh, so much food, so little time!!! :smile tee

The Ginger People company (they have a website) produce great ginger products. Just stick to the plain varieties. They have hard candy, chews, and crystallized ginger - as well as a ginger spread.

I was also able to find some IC safe crackers at the local health food store. I dip them in cream cheese into which I mix parsley and chives or other herbs.

I also like Puffins honey rice cereal. It's a nice light sweet that makes it good for breakfast or a snack.

Oh I must say I am addicted to Vanilla Wafers - and the funny thing is I never liked them as a kid, go figure. They are pretty new to me yet, lol. I keep a box next to my bed...my favorite late night snack...

I LOVE LOVE LOVE the Caramel corn cakes. Thanks for the tip. Do you know where I can buy the kraft caramels? Thanks for all the food tips. Ive been feeling better day by day.

i am so insanely jealous of you, lol...if i ea a single peanut m&m i swear i'll be flaring for a week. rahhh. then again i can eat twix and not feel a thing, so who knows =p


anyway, snacks...most of the ones i eat have been covered i think. i like to make cinnamon toast sometimes on a cold afternoon or for breakfast; i just melt a bit of butter over some white bread toast and sprinkle a bit of sugar and cinnamon and mmmm, it's yummy.

also, vanilla meringues (they sell them at tj's, whole foods, nearly everywhere) are good too.

:biglaugh: itzbezzy, it took a year before the bladder could tolerate them...LOL And the really funny thing is I NEVER liked Peanut M&M's, until my hubby got me hooked recently. He's always loved them, and then spread the evilness to me & my hips!!!! :cussing: MEN!!! Don't give up on 'em, just put them aside for awhile -- um the M&M's, not men, LMAO!! :biglaugh: Well, somedays I would like to set the man aside and just take the M&M's!!!
