Hi all, just wanted to share 2 new food "discoveries" that I've really liked.
Mix these ingredients together for a delicious cold pasta salad.
(My dad invented this recipe for me & I hope you all like it as much as I do!)
Cold pasta (cooked & rinsed in cold water til cool)-spiral or penne
Cold leftover chicken (diced)
Chopped celery
Diced raw zucchini
Lowfat cottage cheese (I used a half cup for about 3 servings)
Small amount of feta cheese (I used a teaspoon per serving)
Small amount of olive oil
Sprinkle of garlic powder to taste
Sprinkle of dill (dried) to taste
This is good by itself, or it would probably top a lettuce salad nicely.
Also, I was craving apple pie recently & came up with this "substitute". It's not quite the same, but still good.
Roll thin slices of pear with cinnamon & sugar inside Pillsbury crescent rolls. Bake for whatever the rolls package says. Enjoy warm.
