Can anyone eat plain pork rinds? A girl I work with puts them in her salad and I was wondering if anyone has problems with them. I would also like to use them in salmon cakes instead of flour or crackers.

I don't have any problems with pork rinds.

Can't say I've ever had a problem with them, but from a health standpoint, they are fried and high in fat, so putting them in salmon cakes is likely to negate any of the nutritional benefits of the fish (especially if you deep fry the cakes, rather than bake them or pan fry them.)

I pan fry them and pork rinds would be low carb which is what I'm trying to do.
