What about lunch meat

I know all of my questions are mostly food question but I love food!! Anyone know of any sliced lunch meat they can eat? So far I have done very well expierimenting with foods but I really would like to know about lunch meats because I know they are prossessed.

Most have nitrates & preservatives. I've found that Boar's head chicken, turkey & roast beef seem to be ok. Kathi
