Our Lions Club bakes and sells pies & hot dogs at a local nursery every October when they have a huge "apple tasting fair." This year I volunteered to bake four pies. I made three fruit ones, then had enough crust for a single crust pie --- being a lazy kind of person, I mixed up an instant lemon pudding and poured it in the baked single crust, then put Cool Whip on top instead of meringue.
Here's the funny: Two people commented that it was the best lemon pie they had ever eaten --- and the two comments were about an hour apart. I didn't share the recipe cause next year I plan to make all lemon pies!
