Hi Guys ! hi I know that we cannot eat aged cheeses but what about fresh parmesan ? I want to make some fetticine alfredo but I'm not sure if the parmesan would be ic friendly. Thanks!

I haven't had any problems with aged parmesan. It really is trial and error with the diet.

I personally do not have problems with cheeses. But acidy foods like tomatoes, citrus, coke, and coffee really make my symptoms worse.

Whenever I am eating something that is questionable as far as acid goes, I take prelief and this helps.

I love the stuff! It never has bothered me before. But who's to say at some point it might trigger a flare..??
The stuff is so fattening that I only treat myself to it from time to time.
It might be fine for you. It's all about trial and error.
Maybe you'll be ok and get to keep it on your "eat w/o flaring list." :)

I eat parmesan cheese, but I also take a Prelief just to make sure, Iris. :) wink

I LOVE Fettucine Alfredo. That is my middle name lmao . It doesn't flare me at all.

Here is the "official" Olive Gardin Alfredo recipe, I swear you will no thave to go spend $12.00 a plate anymore! from Copykat.com

Ingredients:

1 pint Heavy Whipping Cream (do not skimp out, half & half, 2% etc will not work!) skimp on the dessert instead!

1 stick of butter

2 Tablespoons Cream Cheese (Neaufachatel is great 1/2 the fat of regular cream cheese).

1/2 - 3/4 Cup Real Grated Parmesan cheese (buy it in the block form).

1 tsp. Garlic powder

In sauce pan combine butter, heavy cream, & cream cheese. Simmer this until melted and mixed well. Add Parmesan and Garlic powder. Simmer this for 15-20 minutes on LOW, the longer it simmers the better it will taste, be careful not to scortch it, as it will, if left unattended.

I use almost all Mozzarella cheese and put in a little Parmesan for taste. I use the fresh, pre-grated pre-packaged Parmesan, not the one in the green can-like container. Parmesan is a very strong cheese to begin with and you do not want it concentrated. You can get the block and grate it yourself, if you wish.

Based on my experience, the dish is much more bladder friendly if you do not use all Parmesan. I have good luck using whole milk and a little flour put in the butter as it melts--instead of cream and cream cheese. I also have to watch the calories.

Hi Miss Mary! I LOVE parmeasan, and add it to noodles. I don't eat a lot at any one time. Can you try it out by itself first? See how you react? Then if you are good, there shouldn't be much else in the alfredo that causes you difficulty.

I love fettucini alfredo and luckily it doesn't bother my bladder. (However it seems like everything else does lately!!!) banghead Thanks for the recipe!

Speaking of Parmasen Cheese. I used some today for a recipe I got from the IC recipes on the IC network. I used a little more that I should have and it was aged! So now I am in a flare and I really looking forward to have a great sleep ........NOT!!!! So I guess I will be tired again on Monday :( Then to top it all off and I knew I shouldn't have done it, but I did. I had a raspberry dressing on my salad. Then after that, ( you would think I would have stopped by now, but no!) I had strawberries and kiwi and Honeydew melon (which does not bother me) for dessert. Yeah, I' am off to a good start to my week!

The parmesian should be the least of your worries? Fettucine Alfredo? Wheat and dairy! Aye, aye, aye! It's no wonder some people don't seem to get better. They just don't get it.

I do fine with both wheat and dairy. I do have to watch how much cheese I ingest. And whole wheat doesn't agree with my digestive system. Alfredo sauce isn't a problem for me, but I am careful about reading labels.

My biggest problems are acid foods.

Like Donna, wheat and dairy are fine for me. I do have to watch the kind and quantity of cheese that I eat. Aged cheeses are a big NO for me.

This just goes to show how individual everyone is with their diet! Everyone reacts differently, so I think it's kind of mean to say that "no wonder some people don't get better". :( I do fine with Fettucine Alfredo, but I can't sit down and eat a plate of spaghetti. It's all about acidic foods for me, and for some it's all about dairy, or wheat, or whatever. The IC diet is just something you have to do for yourself and learn what you can and cannot eat.

Wheat and dairy have no effect on my symptoms. Like others have said, reactions or flares from diet do vary by individual. Although many here have flares from acidy food/beverages.

I have to interject here that unless you are 100% well, you cannot say with 100% certainty that this or that is fine. If you are not 100% well, then you do not necessarily know what is bothering you. I know nobody likes to hear this or face this, but it is the truth. If you knew what was bothering you, you would stop it, and you would feel well again.

Many ICers, me included, feel good the majority of the time. I absolutely have learned in my 29 years with IC which foods and drinks are a problem for me and I avoid those things. No, I am not totally "well" --- and until a cure for IC is found, I won't be. Actually, I occasionally will get so hungry for one of my triggers that I decide it's worth a flare to have it --- until the flare hits!

We are all so very different --- but I go with what works for me and try to encourage others to do the same.

I am with Donna on this. I will not be totally "cured" or whatever until a cure is out. I do have my flares, and they are not food related, they are hormone related, and that cannot be controlled. But I do know what flares me food wise, and like Donna sometimes I have to give in but I do pay for it for a few days. But that's life, and sometimes you just have to cheat!!!

I get it.. there is a lot I eat and flare and alot that don't make me flare.. If I live on the IC diet I would wittle away to nothing... I like pizza and pizza rolls, poptarts, Chocolate, mountian dew, coffee, and sprite.. Chips, onion rings, and bbq ribs... bbq pork rinds and tacos, I often eat these thing and often flare from them... I know what my body can and can not tolerate, and I know that the diet is a temp fix. I will never get better till there is a cure,, In the mean time I'll watch my own diet, thank you.

Brat
